Job Summary:

An entry-level management position focused on successfully achieving the kitchen’s daily goals. Assisting and leading kitchen staff in all aspects, including food preparation, purchasing, and kitchen sanitation. This position contributes to ensuring guest and employee satisfaction while maintaining operating budgets.

Candidate Requirements:

  • High school diploma or GED; 4 years of kitchen, F&B, or related professional field experience.
  • OR
  • Associate’s degree in Culinary Arts, Hotel and Restaurant Management, or related profession from an accredited university; 2 years of kitchen, F&B, or related professional field experience.

Core Job Activities:

  • Maintain food handling and hygiene standards.
  • Perform all cooking and kitchen-related duties during peak times.
  • Supervise cooking food production and preparation.
  • Ensure staff maintains clean and sanitary work areas.
  • Collaborate with the restaurant and banquet departments to coordinate service and timing of events and meals.
  • Adhere to loss prevention policies and procedures.
  • Strive to improve service performance.
  • Communicate areas needing attention to staff and follow-up to ensure understanding.
  • Lead shifts and personally prepare food and execute requests according to specified standards.
  • Regularly prepare and cook various types of foods for special guests or occasions.
  • Supervise and coordinate the activities of prep cooks and staff.
  • Inspect quality of raw and cooked food to ensure standards are met.
  • Assist in determining how food should be presented and perform decorative food displays.

Support Culinary Team Activities:

  • Supervise daily shift operations.
  • Ensure all staff has proper supplies, equipment, and uniforms.
  • Manage staffing levels to meet guest service, operational, and financial goals.
  • Ensure completion of assigned duties.
  • Participate in employee performance evaluation process and provide feedback as needed.
  • Handle employee issues and concerns.
  • Communicate performance expectations based on job descriptions for each position.
  • Participate in ongoing employee recognition programs.
  • Provide training as needed.
  • Monitor progress of employees in meeting performance expectations.

Maintain Culinary Objectives:

  • Attend department meetings and consistently communicate clear and consistent information about department goals to drive expected performance.
  • Support and assist in providing new menus, concepts, and promotional activities for restaurant and banquet.

Provide Excellent Customer Service:

  • Set a positive example for customer relations.
  • Handle guest issues and complaints, seeking assistance from supervisors when necessary.
  • Authorize employees to provide excellent customer service within guidelines.

Other Responsibilities:

  • Report equipment malfunctions to the department.
  • Purchase appropriate supplies and manage food and supply inventory as per budget.
  • Attend and participate in all relevant meetings.
